Heyya! Aglio E Olio for our Sunday Brunch! Yummm! We love the extra kick of spicyness that comes with the Aglio E Olio. Do give it a try because it is just super easy and delicious spaghetti!

So here's how we make the Spaghetti Aglio E Olio with Hot Pepper Shrimps.

  • Prep Time 20 min
  • Servings 2

Ingredients
1 pound Spaghetti
1/3 cup Olive Oil
8 large garlic cloves (diced finely)
1/2 tsp crushed red pepper flakes
1 baby chilli (Chilli Padi for asians for that extra flavour)
1/2 cup minced fresh parsley
Capsicums (optional)
Grated Parmesan cheese, plus extra for serving
Salt to taste

Method
- Bring a large pot of water to boil.
- Put in the pasta and add 2 tablespoon of salt and olive oil
- Set aside 1/2 cup of the pasta cooking water before you drain the pasta.
- Add in olive oil and garlics to a pan before heating it so that when you start the fire, the oil and garlic infuses together for the aroma.
- Cook for 2 minutes until it turns golden brown.
- Add the chilli flakes and chilli padi and stir them well.
- Stir in diced capsicums (optional)
- Add the drained pasta to the garlic sauce and toss, you can add a little bit of pasta cooking water here.
- Turn off the heat and add the parsley and parmesan and toss well.
- Allow the pasta to rest off the heat for 5 minutes for the sauce to be absorbed.
- Cook shrimps separately with Olive Oil, Pepper, Salt and Chilli Flakes
- Toss with pasta
- Serve warm with extra parmesan on the side.

Enjoy!
